Perhaps give making applesauce a chance.. it's very easy and takes only 10/15 minutes. Plus, it tastes way way better than the stuff bought in a supermarket.

Shall I explain the process how to make it here? I could.. but ja, also.. the internet is full of recipes a/o 'how to make' certain food.

  If you post it here, I will be less likely to lose the recipe.  :)

Well..

Um, one could use a lot of apple variaties (or cultivars) for making applesauce, I suppose.. but some are better for it than others. You'll have to ask someone you know which is a good apple to use. The names in the US/Can differ from the ones we have here.. I usually take a 'Goudreinet' or 'Belle of Boskoop' but ja, have very little a clue what the name for a good applesauce apple is across the pond.

Well, peel the skin off of e.g. two apples and get rid off their cores. After that chop them up into small-ish pieces. Pour a little bit of water into a not that big a pan. This is to prevent the apple pieces to stick to the bottom of the pan. Throw in the pieces of apple and bring it to the boil. Don't forget to stir, with a wooden spoon, once in a while (well, quite regularly, I'd say) and when it boils/bubbles turn the heat lower (to half-heat (?)), and let the content 'simmer' for.. 5~10 minutes. Don't go away and do something else is my advice and keep stirring once in a while.

Basically that's how simple it is but.. I usually add a little stick of cinnamon to the apple pieces.. in the pan.. at the beginning of the cooking process. Also I add one or two (more) teaspoons of sugar (the white stuff) but do this more to the end of simmering process.. no caramelizing is wished. You could add raisins too.. is nice.. but they've got to be soft (if not.. you could soak them in applejuice beforehand). You offered anise seeds and think, due to them being dry, you shoud throw them in the pan at the beginning.

Consistency? Up to you really. It's a matter of how long you let it simmer in the pan. I prefer a more compote-like structuur myself.. with still pieces of apple recognizable in the sauce.. but if you like it more saucey you let it simmer a couple of minutes longer. Don't forget to stir and when you have the consistency you like.. pour the warm applesauce into a ceramic bowl (or sutin' but don't leave it in the pan) and dredge some grounded cinnamon on it. Let it cool off.. et voilà.. it's ready to serve.

No need to stir the apple-sauce often. If you don't stir, till the very end, the chance of it burning is very little, because of the layer of water, I guess.
I tend to put a piece of a cinnamon stick in it too, during the cooking. And, at the end, I seldom ad sugar, I do ad lemon juice now and then, depending on the type of apple I used.
I mainly use apples that are on my fruit bowl, and should be eaten faster than is likely going to happen.

There is another reason for not adding sugar too soon. If you ad sugar right at the beginning, the apples don't fall apart that well. Wolfie can probably explain why that is. Maybe I should check one of his links on cooking about that.

I LOVE a nice big bowl of hot porridge, made with milk instead of water, a big hunk of salted butter, pinch of salt for breakfast. Very healthy and filling. I like it served with slices of butter on top, to make it melt, and create a butter lake over the porridge, so its lovely and salty when eaten.

Or instead, served with honey.

I'm about to go to the chinese and get myself some king prawns in spicy sauce. Not decided what kind of spicy sauce though.
