Title: Food recipes
Post by: TheoK on March 02, 2009, 12:57:23 PM
I thought we'd post some of our favourite food recipes here.

Here's my recipe for pasta sauce bolognese:

½ kilo of minced beef meat

½ kilo of onions

½ kilo of crushed, skin free tomatoes, preferably with basil and/or garlic

3 tablespoons of tomato paste

1 tablespoon of extra virgin olive oil

1-2 tablepoons of honey, preferably dark

1-2 teaspoons of paprika powder

½ teaspoon of cayenne pepper

2 teaspoons of "pasta spice"

a few drops of tabasco sauce

1 tablespoon of meat broth

1 tablespoon of vegetable broth

optional: 1-3 cloves of garlic; fresh basil

Chop the onoins in small cubes and fry them in the olive oil with the minced meat a bit above medium heat; mash it all with a big wooden or plastic fork, until the meat becomes brown (not too dark). Lower the heat to just below medium and add the honey and the broth. After a few minutes, add the other ingredients. The spices should be added at the end. Finished.  8)

And the correct way of cooking pasta:

Take 1 litre of water and 10 grams of salt for every 100 gram of pasta. Or for a lb of pasta you need a gallon of water and an ounce of salt. If you cook for many people, you might need a cauldron, but it's worth it.

Add some olive oil, so that the pasta won't stick while cooking. 1 teaspoon for every 100 gram will do.

If you want al dente, you cook the minimum of time that it says on the package; heat just above medium.

Pour the water off and add some real butter both for the taste and to avoid stickiness.  8)

Eating food is much better than cooking food. Plus if and when I do cook, it puts me off eating.

I have many cook books, though I usually cook out of my memory.  8)
