i had a sandwich last night, around 3 am, with cheese, and a slice of ham on. and technically, that was today.

I had enchilazagna - a funny thing my wife learned from the Rachel Ray television show. It's just like it sounds; a layered (instead of rolled) enchilada made with cottage cheese like lasagna in a large casserole dish and lightly baked.

It was her first attempt at this oddball creation and it was wonderful!

(of course, I had apples earlier, too)
