And I dunno, people age steak do they not? I confess though I've always found the practice of hanging meat REALLY weird. You'd think that after people stringing up pieces of beef or venison, or any kind of meat for that matter for a month, given or take, that it would decay and become not just foul to eat but outright dangerous. I could picture how it might have started being done mind you, say in those times past where there were no supermarkets, no packed meals, and when the difference between success in raising crops and meat was that 'twixt feast and famine, when the meat was left, and they said to themselves fuck, that has to have gone bad, but its eat it, or starve and the mothers amongst us have their milk dry up and our children starve and die. So they'd eat it anyway, with as many strong herbs as they could find
Hanging meat like that though still strikes me as kinda...icky.
