Yes, without the cookies though, couldn't bring myself to make them anymore. They take a lot of time to make. But, we are ready.

And after a light meal, we will head to the house of the best friend of my 13 year old. The younger siblings like each other a lot too, and over the years a friendship has formed between the parents and me too. We'll be together till somewhere after midnight.

Just put the mix in a muffin pan instead of the 8X8 pan. When I put it in the 8X8 pan it is too thin spread across the bottom.

Sounds good.  Does making them this way give you a sort of crispy chewy edge on the bottom, like the corners turn out if you make them in an 8X8 pan?

No, and I like that chewy edge you refer to, but it also doesn't burn the edges the way my oven does. My brownie muffins do come out moist and yummy though. I also moke cornbread muffins, because cornbread and pinto beans go great together. Pintos are the king of beans IMO.

I wonder if they would have that chewy bottom if I made them in a mini-muffin pan?

I like the brownie corners best.

If you have a cookie sheet, particularly an airbake one, you could set the pan on that in the oven to help prevent burned edges.   Also, your oven might be running a little hotter than the setting would indicate.  You can calibrate it if you have a good thermometer to test it with.
